We are publishing on our 'Mailbox' page extracts of letters sent to the editorial team at CTA. These letters have been selected for their potential interest to other readers of Spore. we shall also be publishing correspondence arising from CTA's Question and Answer Service. Readers are therefore invited to send us further information on subjects covered in Spore.

Spore would also be pleased to receive short articles and news items on agriculture and rural development in ACP countries; these will be considered for publication in our 'In Brief' pages. Finally, under the heading 'Viewpoint' we will continue to publish personal opinions on the subject of agricultural development in general.

SPORE: The courses advertized in Spore are organized by other institutions, and not sponsored by CTA. Readers should contact the organizers directly to apply for sponsorship. However, in the context of its objective to strengthen ACP information and communication services CTA organizes courses on specialized topics such as scientific and technical writing, the production of agricultural extension materials and the management of information services. Please contact CTA for more specific information about these courses.

Recently, I was talking about the bulletin with an official who wanted to take up silkworm production, or maybe it was ostrich, geese or peacock farming lt would be very useful to have a special edition, picking up the themes of the main books recommended, in order to avoid having to reread earlier issues, one by one, to find a reference read once but then relegated to a corner of the memory "

• Tezoh Lawrence Chialefack, Tombel, Cameroon: "Is it not possible to advertise the courses and conferences about a year before time? I am saying this because most of the courses are very interesting to us but the time is usually too short to prepare for it."

SPORE: Message to course organizers: because the bulletin appears bimonthly, and because it can take some time for our readers in the ACP countries to receive it and to respond, it is advisable to submit all information on courses and conferences as early as possible.

• Miss Indranee Buldawoo, Rose Hill, Mauritius: "I want to get acquainted with new techniques specially related to vegetable crops, seed technology, variety testing and various seed tests. I also wanted more information on hydroponics especially where vegetable growing is concerned. I frequently receive Spore magazine. It is very interesting but unfortunately not much is learnt about the above topics. "

• Martin Desire Abega, Association Terre et Développement, Ngoumou, Cameroon: "We are a young NGO concerned with rural development in the Mefou Akono regions of Central Province. We have a number of experiences which we would like to share and ask whether you would be prepared to publish the following: Experiences of a rural bakery based on a large capacity brick oven; processing local tuber crops to produce flour; construction of better housing using mud bricks."

Questions and answers

Emmanuel Arua Ijere, Inland Town, Onisha Sate, Nigeria: "We want to produce Sweetened Condensed Milk and Unsweetened Evaporated Milk, based on Soy milk (60%) and cows' milk (40%). Both products will be packaged in 150ml plastic sachets and 350ml plastic bottles, to make the products affordable to the lower income groups within the Onitsha Urban and its environs. However my knowledge of milk processing is very elementary, please send me appropriate information.

SPORE: Your idea of producing concentrated and evaporated milk from a mixture of soya and cows' milk is novel, but we would not recommend it. Soya milk does not have the same properties as cows' milk and would most likely form a beany-tasting mass when concentrated.

Société Nouvelle d'lndustrie Alimentaire (SONIA), Douala Cameroon: 'We have been testing the biscuits described in Philippe de Staercke's book Soya but have encountered several problems. 1) The dough obtained from the proportions given is very stiff. 2) We have to ignore the given cooking time. 3) The finished result looks unappetising and the biscuits are very sweet and not at all crisp. Can you help us solve these problems?"

SPORE: In many recipes for soya biscuits, it is recommended that soya flour is not the only flour that is used. Even though soya is a good ingredient from the point of view of health {because it is high in protein which is important for growth and protection from disease it is not an easy product to cook. This is because it contains no gluten, the substance which makes dough rise and gives good texture. Bread and biscuits prepared with flour which contains gluten (wheat, oats, barley and rye) are also lighter and more crumbly. It is therefore a good idea to mix soya flour with other flours that contain a high proportion of gluten.

It is also possible to make biscuits from soya alone by adding oil because this also improves the texture. Recipes are given in the Agrodok booklet Soya which is available from CTA.
